Looks to me like every team is young.....
...taken from each school's most recent 2 deep roster - (the number of freshman/redshirt freshmen & sophomores on the roster)
1. (tie) Furman - 37 offense - 16 defense - 11 special tm - 10
1.(tie) VMI - 37 offense - 17 defense - 17 special tm - 3
3. WCU - 34 offense - 9 defense - 14 special tm - 11
4. Mercer - 32 offense - 14 defense - 10 special tm - 8
5. Samford - 29 offense - 9 defense - 12 special tm - 8

Total Defense - # of Freshmen 1. Wofford - 7 2. ETSU - 9 3. Samford - 12 4. Chattanooga - 11 5. The Citadel - 10 6. Furman - 11 7. WCU - 14 8. Mercer - 10 9. VMI - 17
Scoring defense 1. Chattanooga - 11 2. Wofford - 7 3. ETSU - 9 4. Samford - 12 5. The Citadel - 10 6. Furman - 11 7. Mercer - 10 8. WCU - 14 9. VMI - 17
Of course this is just a small sample of data but it does seem to support the young defense. Mercer seems to be an outlier
Total Offense 1. Samford - 9 2. WCU - 9 3. Wofford - 12 4. Mercer - 14 5. VMI - 17 6. The Citadel - 12 7. Chattanooga - 9 8. ETSU - 9 9. Furman - 16
Less correlation it seems on offense as the numbers are all over the place. This could due to the style of offense, and how often a team has to play from behind. Special teams are hard to calculate as the amount of kicks/punts was very different between the teams.
*The Citadel and Furman have one less game played than the rest of the schools at this point.
